Crispy fried chicken with a flavorful buttermilk and cayenne coating, fried to perfection, ideal for picnics.
Ingredients:
  • cold water to cover
  • 0.25 cup kosher salt
  • 8 skinless chicken legs
  • 3 cups all-purpose flour, divided
  • 1 cup buttermilk
  • 1.25 tablespoons baking powder
  • 2 teaspoons salt
  • 2 teaspoons cayenne pepper
  • 1.5 cups canola oil, for frying
Instructions:
  • In a large bowl, combine cold water and kosher salt until the salt dissolves. Add chicken legs to the mixture, cover the bowl with plastic wrap, and refrigerate for 2 hours.
  • Take the bowl out of the refrigerator, then gently drain any liquid and use paper towels to pat the chicken dry.
  • Coat chicken legs by placing them in a plastic bag with 1 cup of all-purpose flour and shaking until evenly coated.
  • First, pour the buttermilk into a bowl. Then, in a separate bowl, combine the remaining flour, baking powder, salt, and cayenne. Dip each chicken leg into the buttermilk, then coat well with the flour mixture.
  • Preheat canola oil in a deep-fryer to 350 degrees F (175 degrees C) until hot.
  • Fry chicken legs in hot oil in batches for about 15 minutes until fully cooked and the juices run clear. Use an instant-read thermometer to ensure the internal temperature near the bone reaches 165 degrees F (74 degrees C).
