Simple, kid-friendly vegetarian bites perfect for snacking on the go.
Ingredients:
  • 2 x 420g cans corn kernels, drained
  • 55g (1 cup) finely grated cheddar
  • 100g feta, crumbled
  • 40.00 ml chopped fresh chives, plus extra, to serve
  • 75g (1/2 cup) self-raising flour
  • Pinch of cayenne pepper (optional)
  • 80ml (1/3 cup) milk
  • Bulla Light Sour Cream, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • In a large bowl, combine corn, cheddar, feta, and chives using your hands. Add flour and cayenne (if desired) and season with salt. Mix well with a spatula and create a well in the center.
  • In a jug, gently combine the eggs and milk. Pour the mixture into the well and carefully fold until just incorporated (avoid overmixing).
  • Preheat a pie maker and lightly grease the holes with oil. Fill each hole with a 1/4-cup portion of corn mixture. Close the lid and cook for 10 minutes or until done (tops will be pale).
  • Remove the fritters from the oil and place them on a wire rack. Repeat the process with the rest of the mixture to create 2 additional batches.
  • Enjoy the dish warm or at room temperature, garnished with sour cream, sweet chilli sauce, and extra chives.
