Pie maker cheesy garlic bread bombs recipe

Garlic bread balls made in a Kmart pie maker - perfect for a simple, kid-friendly meal or snack.
Ingredients:
  • 300g (2 cups) plain flour
  • 8.00 gm baking powder
  • 80g unsalted butter, chilled, finely chopped, plus 60g extra
  • 185ml (3/4 cup) milk
  • 82.50 ml chopped fresh basil, plus extra leaves, to serve
  • 80g mozzarella, cut into 8 pieces
Instructions:
  • In a large bowl, combine the flour and baking powder. Add the chopped butter and gently rub it into the flour mixture using your fingertips until it forms coarse crumbs.
  • Create a hole in the middle of the flour mixture and pour in the milk. Use a knife to gently mix until the dough forms. Transfer the dough onto a lightly floured surface and knead briefly until smooth. Divide into 8 portions.
  • In a microwave-safe bowl, combine the garlic and extra butter. Microwave on high for 1 minute or until completely melted. Mix in the chopped basil.
  • Shape the dough into an 8cm disc, then place a mozzarella piece dipped in the butter mixture in the center. Seal the edges by bringing them up and pressing to enclose. Roll into a ball and repeat with the remaining bread and mozzarella pieces.
  • Lay four bread bombs, seam side down, in the pie maker. Cook for 6 minutes. Brush with remaining butter mixture, flip over, and cook for another 6 minutes. Transfer to a plate, cover with foil to keep warm. Repeat with remaining bread bombs. Serve garnished with extra basil leaves.
