Simplify zucchini and haloumi fritters using a pie maker for a convenient and versatile meal option for both dinner and lunch.
Ingredients:
  • 4.60 gm olive oil
  • 3 green shallots, trimmed, thinly sliced
  • 3 (about 500g) zucchini, coarsely grated
  • 250g haloumi, coarsely grated
  • 400g can corn kernels, rinsed, drained
  • 100g (2/3 cup) self-raising flour
  • 2 eggs, lightly whisked
  • 125g (1/2 cup) whole egg mayonnaise
  • 65g (1/4 cup) Light Sour Cream
  • 21.00 gm fresh lemon juice
Instructions:
  • In a small frying pan over medium heat, gently heat the oil. Add the shallot and garlic, cooking and stirring for 3 minutes until they soften. Transfer the fragrant mixture to a spacious large bowl.
  • Squeeze excess liquid from zucchini, then place in a large bowl. Add haloumi, corn, flour, egg, pepper and stir well to combine.
  • Get the pie maker nice and hot, then spoon 1/3 cup of the mixture into each compartment. Give a gentle mist of oil on top of each fritter. Close the pie maker and let them cook for about 12 minutes until they turn a beautiful golden color. Move the fritters to a wire rack. Repeat the process with the rest of the mixture.
  • Prepare a flavorful dipping sauce by mixing mayonnaise, sour cream, and lemon juice in a small bowl until well combined. Enjoy the sauce with the fritters.
