Make perfect mini quiches in a pie maker for picnics or parties!
Ingredients:
  • 4 Free Range Eggs
  • 160ml cream
  • 35g plain flour
  • 3 sheets frozen shortcrust pastry, partially thawed
  • 2 medium zucchini, thinly sliced
  • 1 spring onion, thinly sliced
  • 2 bacon rashers, finely chopped
  • Chopped chives, to serve
Instructions:
  • Combine eggs, cream, and flour in a large jug, whisking until well mixed.
  • Preheat the pie maker. Cut 12 discs from the pastry sheets using a 10.5cm pie maker base cutter.
  • - Arrange 4 pastry discs in the pie maker. - Distribute one-third of the zucchini, spring onion, and bacon onto the pastry bases. - Fill with egg mixture until it reaches the edge of the pastry. - Close the lid and cook for 8 minutes until the pastry is puffed and the filling is cooked.
  • Continue layering the remaining pastry discs with zucchini, spring onion, bacon, and egg mixture to create a total of 12 quiches. Finish by sprinkling chives on top. Enjoy them warm or at room temperature.
