Zucchini and bacon spaghetti

Perfectly cut and shredded ingredients ensure each strand of spaghetti is fully flavored. Indulge in a delightful pasta dish with a glass of wine to unwind at the end of the week.
Ingredients:
  • 400g dried thin spaghetti pasta
  • 250g short-cut bacon rashers, cut into thin strips
  • 1 small brown onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 3 large zucchini, trimmed, coarsely grated
  • 250ml (1 cup) light thickened cream
  • 40g (1/2 cup) shredded parmesan
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in generously salted water until perfectly al dente. Drain and return pasta to the pan.
  • In a large frying pan over medium-high heat, sizzle the bacon and onion until the onion softens, about 5 minutes. Toss in the garlic and zucchini, and stir for another 2-3 minutes until the zucchini softens slightly. Pour in the cream and cook until heated through, about 2-3 minutes.
  • Combine the zucchini mixture and shredded parmesan with the pasta, toss well, then divide among serving dishes. Top with shaved parmesan, sprinkle with pepper, and serve.
