Whip up a simple pasta dish for a stress-free Thursday night meal.
Ingredients:
  • 375g spaghetti
  • 56.88 gm olive oil
  • 250g shortcut rindless bacon rashers, thinly sliced
  • 3 garlic cloves, crushed
  • 2 large zucchini, grated
  • 2 tsp finely grated lemon rind
  • grated parmesan cheese, to serve
Instructions:
  • Boil pasta in a big pot of salted water according to package instructions until tender. Save 1/2 cup of cooking liquid. Put pasta back in the pot and cover to keep warm.
  • - In a large frying pan over medium-high heat, sizzle 1 tablespoon of oil. Throw in the bacon and cook, stirring occasionally, until browned in about 3 minutes. Toss in the garlic and zucchini and cook, stirring, for an additional minute. Combine with the pasta, lemon rind, reserved liquid, and remaining oil. Mix it all together well. Sprinkle with parmesan on top and serve.
