Ingredients:
  • 36.40 gm olive oil
  • 4 bacon rashers, coarsely chopped
  • 2 garlic cloves, finely chopped
  • 2 zucchini, ends trimmed, halved lengthways, diagonally thinly sliced
  • 625g Latina™ Fresh Filled Pasta, Beef Ravioli
  • 125.00 ml flat-leaf parsley leaves
  • 125.00 ml shaved parmesan
Instructions:
  • In a large frying pan over medium-high heat, sizzle bacon in oil until golden, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Toss in zucchini and cook until just tender, about 4-5 minutes.
  • Cook the Latina™ Fresh Filled Pasta, Beef Ravioli according to package instructions until al dente; drain well and save 3/4 cup of the cooking water.
  • Combine pasta with reserved pasta water into the flavorful bacon mixture, ensuring it is well coated. Season generously with salt and pepper before adding fresh parsley for a burst of flavor. Finally, serve in individual bowls and sprinkle with Parmesan for an added touch. Enjoy promptly.
