Delicious cheesy rice muffins made with brown rice, sweet potato, broccoli, and zucchini in a handy Kmart pie maker.
Ingredients:
  • 250g pkt microwave brown rice
  • 180g sweet potato, peeled, coarsely grated
  • 1 small (about 80g) zucchini, coarsely grated
  • 60g broccoli, coarsely grated
  • 60g sliced smoked ham, coarsely chopped
  • 1 green onion, trimmed, sliced, plus extra, to sprinkle
  • 105g (1 1/4 cups) pre-gated three cheese blend
  • 5 eggs, lightly whisked
  • Bought tomato chutney, to serve (optional)
Instructions:
  • Put the rice in a bowl and gently separate the grains with your fingers. Add sweet potato, zucchini, broccoli, ham, green onion, and 80g (1 cup) of cheese. Mix well. Add the egg and season to taste.
  • Preheat your pie maker. Fill each pie maker hole with one-third cup of the mixture, then sprinkle 1 teaspoon of the remaining cheese on top. Close and cook for 8 minutes. Gently flip the rice cups over and continue cooking for another 2 minutes covered. Transfer to a plate and repeat with the remaining mixture.
  • Garnish the rice with extra green onion and enjoy with tomato chutney, if desired.
