Make gluten-free pumpkin muffins with oat flour - healthy, delicious, and easy to make.
Ingredients:
  • 1.5 cups oat flour
  • 0.5 cup packed brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 0.5 cup honey
  • 0.25 cup unsweetened applesauce
  • 0.25 cup vegetable oil
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • In a large bowl, blend oat flour, brown sugar, baking powder, cinnamon, baking soda, nutmeg, ginger, cloves, and salt with a fork. In another bowl, mix pumpkin puree, eggs, honey, applesauce, and oil. Combine pumpkin mixture with flour mixture using a spatula until fully incorporated.
  • Carefully scoop the batter into the muffin tin, filling each cup three-fourths full.
  • Bake the cupcakes for 22-25 minutes until a fork or toothpick comes out clean when inserted in the center.
