Pumpkin pie bars: Oat crust with spiced pumpkin filling, easy and adorable twist on traditional pie.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup rolled oats
  • 0.75 cup white sugar
  • 1 (15 ounce) can pumpkin
  • 1 (12 fluid ounce) can evaporated milk
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Cream together butter and brown sugar in a medium bowl until well combined. Stir in flour, then gently fold in oats. Press the mixture into a 9x13-inch baking dish.
  • Toast in the preheated oven for 15 minutes until golden brown.
  • Take a large bowl and combine eggs with white sugar, then mix in pumpkin and evaporated milk. Add salt, cinnamon, ginger, and cloves, and pour the mixture over the baked crust.
  • Place in the preheated oven for 20 minutes until perfectly cooked. Allow it to cool before slicing into delectable squares.
