Easy pumpkin pie cake: all the flavor of pumpkin pie, perfect for a crowd-pleasing Thanksgiving dessert.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 0.5 cup margarine
  • 1 (29 ounce) can pumpkin puree
  • 0.66 cup evaporated milk
  • 3 large eggs
  • 1.5 teaspoons ground cinnamon
  • 1 cup brown sugar
  • 0.25 cup margarine
Instructions:
  • Preheat the oven to 350°F (175°C), then generously grease and flour a 9x13-inch pan.
  • Set aside 1 cup of cake mix. Mix the rest of the cake mix with melted butter and 1 egg in a bowl. Press the mixture into a 9x13-inch pan to create a crust.
  • Combine the pumpkin, evaporated milk, 3 eggs, sugar, and cinnamon until smooth. Pour the mixture over the crust.
  • Mix together brown sugar and 1 cup of reserved cake mix in a bowl. Blend in butter until the mixture is crumbly. Sprinkle the crumb mixture over the pumpkin filling.
  • Bake in a cozy oven for 50 minutes, then chill in the refrigerator.
