Easy pumpkin pie bars - all the flavor with less effort.
Ingredients:
  • 4 large eggs
  • 1.5 cups white sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 1 (29 ounce) can pumpkin puree
  • 2 (12 ounce) cans evaporated milk
  • 1 (15.25 ounce) package yellow cake mix, divided
  • 0.5 cup butter, melted
  • 1 (8 ounce) container frozen whipped topping, thawed
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large bowl, vigorously beat the eggs. In a separate bowl, combine sugar, cinnamon, salt, ginger, and cloves. Mix the sugar mixture and pumpkin into the eggs until fully combined.
  • Slowly incorporate the evaporated milk into the pumpkin mixture. Combine 1 cup of yellow cake mix with the pumpkin mixture, ensuring a smooth texture. Transfer the mixture into a 9x13-inch baking dish. Sprinkle the remaining yellow cake mix on top and generously drizzle with butter.
  • Bake in the preheated oven for about 1 hour until fully set. Allow it to cool to room temperature before cutting into bars, then top with whipped topping for a delicious finish.
