Whip up simple and nutritious banana pancakes in your piemaker with just ripe bananas, eggs, and self-raising flour.
Ingredients:
  • 2 over-ripe bananas, plus 1 ripe banana, sliced, to serve
  • 75g (1/2 cup) self-raising flour
  • Maple syrup or honey (optional) to drizzle
Instructions:
  • In a medium bowl, smoothly mash the bananas with a fork. Add the eggs and whisk together. Slowly incorporate the flour until a smooth batter forms. Let it rest for 10 minutes.
  • Fill each pie maker hole with the batter, close the lid, and cook on high heat for about 7 minutes or until golden and cooked through. Transfer the pancakes to a plate and continue with the remaining batter in the same manner.
  • Top the pancakes with fresh banana slices and drizzle with maple syrup or honey, if desired.
