Pie maker chocolate and zucchini cakes recipe

Irresistible chocolate zucchini cakes made in a pie maker for a guilt-free indulgence!
Ingredients:
  • 375.00 ml finely grated zucchini (see notes)
  • 180.00 gm brown sugar
  • 150.15 gm light-flavoured olive oil
  • 2 eggs
  • 375.00 ml plain flour
  • 42.90 gm cocoa powder
  • 4.00 gm baking powder
  • Icing sugar mixture, to serve
Instructions:
  • Drain zucchini in a sieve and squeeze out any extra moisture.
  • In a large bowl, combine brown sugar and oil, whisk until smooth. Add eggs and vanilla, whisk until blended. Sift flour, cocoa, and baking powder over the mixture, stir until just combined. Gently fold in the zucchini until well incorporated.
  • Preheat the pie maker. Fill each hole with ¼ cup of mixture. Close the lid and cook for 8 minutes or until a skewer inserted in the center comes out clean. Transfer cakes to a wire rack to cool. Repeat with remaining mixture to make 12 cakes. Dust with icing sugar and serve.
