Cheesy potato gem bites with sour cream and sweet chili sauce, made easy in a Kmart appliance.
Ingredients:
  • 37.60 gm Light Sour Cream
  • 20.00 ml chopped fresh chives
  • 760g potato gems
  • 3 middle bacon rashers, finely chopped
  • 250.00 ml grated pizza cheese
  • Sour cream, to serve
  • Sweet chilli sauce, to serve
  • Chopped fresh chives, to serve
Instructions:
  • Combine eggs, sour cream, and chives in a jug, whisk until smooth, then season with salt and pepper to taste.
  • Preheat the pie maker, then place 6 potato gems in each hole. Close the lid and cook for 10 minutes or until they are tender and golden.
  • Heat oil in a medium frying pan over medium-high heat. Cook bacon until golden brown, stirring occasionally. Remove from heat.
  • Sprinkle roughly 2 teaspoons of bacon in each potato gem hole. Follow with 1 tablespoon of egg mixture and 1 tablespoon of cheese on top. Close the lid and cook for 1 to 2 minutes until the tops are golden and set. Transfer carefully to a plate and repeat with the rest of the potato gems, bacon, egg mixture, and cheese.
  • Top with an extra dollop of sour cream and sweet chili sauce. Garnish with additional chives before serving.
