Vibrant corn fritters - perfect for a festive table and convenient make-ahead lunches.
Ingredients:
  • 420g can corn kernels, drained, rinsed
  • 125.00 ml plain flour
  • 2 eggs, lightly beaten
  • 20.00 ml finely chopped fresh chives
  • 2 green onions, finely sliced
  • 36.40 gm olive oil
  • 1 avocado, chopped
  • 1/2 red capsicum, finely chopped
  • 1/2 small red onion, finely chopped
  • 20.00 ml chopped fresh coriander leaves
  • 22.00 gm sweet chilli sauce
Instructions:
  • In a bowl, mix together corn, flour, eggs, chives, and onion.
  • Heat oil in a large non-stick frying pan over medium heat. Spoon 1 tablespoon of the mixture for each fritter and cook for 4 minutes on each side until golden and cooked through. Place on a plate lined with paper towel. Repeat with the rest of the mixture to make a total of 16 fritters.
  • Prepare the Avocado Salsa by mixing ripe avocado with fresh lemon juice. Next, fold in chopped capsicum, onion, fresh coriander, and a drizzle of sweet chili sauce. Gently mix all the ingredients together until well combined.
