Irresistible Zesty Corn Fritters with Spicy Sweet Chili Dipping Sauce. Addictively delicious!
Ingredients:
  • Dipping Sauce
  • 3/4 cup rice vinegar
  • 1/2 cup sugar
  • 1 1/2 teaspoons red chili pepper flakes
  • 1 1/2 teaspoons salt
  • 1 large clove garlic, minced
  • Fritters
  • 1 cup flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 egg, lightly beaten
  • 1 teaspoon lemon juice
  • 1/2 cup water
  • 2 cups of corn kernels, (see steps for cutting corn from a cob ) cut from 3 large cobs (or frozen corn, defrost and drain first)
  • 4 large scallions or green onions, finely sliced (about half a cup)
  • 1/4 cup chopped cilantro
  • Extra virgin olive oil or peanut oil, for frying
Instructions:
  • Prepare the dipping sauce by combining all sauce ingredients in a small saucepan. Heat on medium, stirring with a wooden spoon until the sugar dissolves. Increase to medium-high heat and boil for 5-10 minutes until it thickens. Remove from heat and let cool - the sauce will thicken further as it cools. Add a little water if needed to adjust the consistency.
  • Prepare the corn fritter batter by combining flour, baking powder, salt, ground coriander, and ground cumin in a medium bowl. Mix in egg, lemon juice, and water until smooth. Fold in corn, scallions, and cilantro until just combined.
  • For the corn fritters: Heat a large frying pan over medium high heat, generously coat the bottom with oil. Spoon 2 heaping tablespoons of fritter batter into the pan for one fritter, pressing it down. Cook for 2-3 minutes on each side until nicely browned. Transfer to a plate lined with paper towels. Serve with sweet chili dipping sauce. Add more oil to the pan as needed. Be cautious of splatters while cooking - use a splatter guard or wear long sleeves. Enjoy immediately.
