Spicy corn fritters with zesty salsa and easy Bisquick® mix.
Ingredients:
  • Vegetable oil
  • 4 cups Original Bisquick™ mix
  • 1 cup cold water
  • 2 cans (15.25 ounces each) whole kernel corn, drained
  • 2 cans (4 oz) Old El Paso™ Chopped Green Chiles, well drained
  • Salsa, if desired
Instructions:
  • Preheat a deep fryer with 2 to 3 inches of oil to 375°F.
  • Combine the Bisquick mix, cold water, and eggs in a large bowl, stirring until smooth. Gently fold in the corn and chilies.
  • Scoop small spoonfuls of batter into hot oil and fry until perfectly golden brown. Place on paper towels to drain excess oil. Enjoy with salsa.
