Spicy corn fritters paired with fragrant Thai chicken coconut soup for a delicious meal.
Ingredients:
  • 2 large eggs
  • 100g plain flour
  • 2 garlic cloves, chopped
  • 5.00 gm caster sugar
  • 24.40 gm Thai fish sauce
  • 270g can corn kernels, drained
  • 2 spring onions, finely chopped
  • 36.80 gm sunflower oil
  • 44.00 gm sweet chilli sauce, to serve
Instructions:
  • In a food processor, blend together eggs, flour, garlic, caster sugar, fish sauce, half of the corn kernels, half a teaspoon of sea salt, and half a teaspoon of freshly ground black pepper until smooth.
  • Combine the chopped spring onions and remaining corn kernels, then stir to mix. Heat oil in a non-stick frypan over medium-high heat.
  • Drop dollops of corn batter into the pan and cook until golden on both sides, about 1-2 minutes per side. Keep warm as you cook the rest of the fritters.
  • Plate the fritters and generously drizzle them with sweet chili sauce, or offer a side of sweet chili sauce for dipping.
