Soothing and nourishing corn soup - simple and delicious.
Ingredients:
  • 21.00 gm Thai red curry paste
  • 400ml coconut milk
  • 382.50 gm chicken stock
  • 400g can sweet corn kernels
  • 310g can creamed corn
  • 20.00 ml coriander, chopped
  • 2 tomatoes, chopped
  • 3 spring onions, chopped
Instructions:
  • In a medium saucepan, sauté the curry paste over low heat for 1-2 minutes until aromatic. Pour in the coconut milk and stock, then bring to a boil.
  • Combine sweet corn and creamed corn into the mixture and simmer for 5 minutes until heated through. Serve in bowls and garnish with tomatoes, onions, and fresh coriander.
