Bubble and squeak patties with avocado bacon salad

Elevate frozen vegetables to star in a delicious main dish!
Ingredients:
  • Alfa One rice bran oil cooking spray
  • 750g packet frozen rustic cut garlic lemon thyme and sea salt potatoes
  • 280g sweet potato
  • 150g corn cob
  • 2 eggs, lightly beaten
  • 187.50 ml dried breadcrumbs
Instructions:
  • 1. Preheat oven to 220°C/200°C fan-forced and grease a baking tray. 2. Prepare the potato, sweet potato, and corn according to package directions. 3. Transfer the cooked vegetables to a bowl, slightly cool, and lightly mash. 4. Allow the mixture to cool for 10 minutes before using.
  • Mix in half of the egg with the vegetables and form 8 patties. In a separate bowl, whisk together the remaining egg and 1 tablespoon cold water. Place breadcrumbs in another bowl. Dip the patties in the egg mixture and then coat with breadcrumbs.
  • Lay patties on baking tray and generously coat with oil spray. Bake for 20 minutes, flipping midway, until golden brown. Enjoy with a side of avocado bacon salad (refer to related recipe).
