Bubble and squeak with cheesy toast

Irresistible veggie patties with cheesy toast will win over kids and adults alike.
Ingredients:
  • 3 medium washed potatoes, peeled and chopped
  • 150g sweet potato, peeled and chopped
  • 1 small carrot, peeled and chopped
  • 62.50 ml frozen peas
  • 20.00 ml dried breadcrumbs
  • salt and cracked black pepper
  • 4 slices wholemeal bread
  • low-fat cheese, grated
Instructions:
  • Steam the potatoes, sweet potato, carrots, and peas until tender. Transfer them to a large heatproof bowl and let them sit for 5 minutes. Roughly mash the vegetables and mix in the breadcrumbs.
  • Once the mixture has cooled to a comfortable temperature, form 1/3 cup portions into rustic rounds. Heat a splash of oil in a sizeable non-stick frying pan on medium heat. Sear each cake for 2-3 minutes, or until they achieve a golden brown hue.
  • While the bubble and squeak cakes are cooking, sprinkle grated cheese on the bread and toast in the oven under the grill until it's melted and golden. Serve alongside a couple of the bubble and squeak cakes.
