Healthy bubble and squeak packed with veggies for a guilt-free and tasty meal.
Ingredients:
  • 30g butter
  • 1 leek, trimmed, halved, washed, thinly sliced
  • 1000.00 ml leftover roast vegetables (see related recipe)
  • 23.40 gm dijon mustard
  • 9.20 gm olive oil
  • 4 eggs
  • Baby spinach, to serve
Instructions:
  • In a 20cm (base) heavy-based, non-stick, flameproof frying pan over medium heat, melt 20g butter. Saute leeks until softened, about 5 minutes. Stir in roast vegetables and cook for 5 to 10 minutes until heated through. Transfer to a large heatproof bowl, add mustard, season with salt and pepper, and roughly mash.
  • Melt the rest of the butter in a pan over low heat, then add the vegetable mixture. Spread it over the bottom of the pan, pressing down to compact it. Cook for 12 to 15 minutes until the base is crispy.
  • Preheat the grill on high. Slide the pan under the grill. Grill for 2 to 3 minutes or until the top turns golden. Let it rest for 5 minutes, then flip it onto a plate or board.
  • Heat oil in a non-stick frying pan over medium heat. Cook eggs for 2 minutes until whites are set and yolks are soft. Cut bubble and squeak into wedges, then serve with baby spinach and eggs.
