Bubble and squeak

Indulge in a classic British bubble and squeak - a wallet-friendly dish packed with nutritious veggies, perfect for tonight's dinner.
Ingredients:
  • 750g sebago potatoes, peeled, cut into 4cm pieces
  • 2 carrots, peeled, finely diced
  • 320g cabbage
  • 1 brown onion, finely chopped
  • 40g butter, chopped
  • 400g beef sirloin steak, trimmed
  • olive oil cooking spray
  • mild English mustard, to serve
Instructions:
  • In a large saucepan, submerge potatoes in cold water and bring to a boil over high heat. Reduce heat to medium and simmer with a partial cover for 15 minutes until potatoes are tender. Drain thoroughly and transfer to a bowl, then lightly mash.
  • Fill a saucepan halfway with salted water and bring it to a boil over high heat. Add carrots and cabbage and cook for 2 minutes, or until tender. Drain the vegetables, rinse them under cold water, and drain well. Add the vegetables to the potatoes.
  • In a 22cm non-stick frying pan, warm 1 tablespoon of oil over medium heat. Cook onion for 3 to 4 minutes until soft, then combine with vegetable mixture.
  • Ensuring all flavors are perfectly balanced, thoroughly combine the ingredients and generously season with salt and pepper.
  • In a non-stick frying pan, gently heat the butter and remaining 1 tablespoon of oil. Spread the vegetable mixture evenly over the base and cook for 20 to 25 minutes until the base is golden and crisp.
  • Preheat a chargrill or barbecue plate over medium-high heat. Lightly spray both sides of the steak with oil and season with salt and pepper. Grill the steak for 3 to 4 minutes per side for medium doneness, or to your preference. Remove the steak, cover, and let it rest for 5 minutes before thinly slicing.
  • Preheat a grill to medium-high heat. Place the bubble and squeak (still in the pan) under the grill. Cook for 2 to 3 minutes until golden. Transfer to a board, cut into wedges, and serve alongside steak with mustard.
