Bubble and squeak chunky potato cakes

Whip up crispy golden potato and ham cakes, topped with zesty coriander pesto and a squeeze of fresh lime.
Ingredients:
  • 75g breadcrumbs
  • Vegetable oil, to shallow-fry
  • Coriander leaves, to serve
  • Lime wedges, to serve
  • 75g plain flour
  • 2 brushed potatoes, peeled, coarsely chopped
  • 1 gold sweet potato, peeled, coarsely chopped
  • 120g pea
  • 2 spring onions, thinly sliced
  • 2 ham steaks, coarsely shredded
  • 2 Free Range Eggs
  • 250.00 ml coriander leaves
  • 35g almond
  • 1 long red chilli, seeded, finely chopped
  • 21.00 gm lime juice
  • 60ml olive oil
Instructions:
  • Boil the potato and sweet potato in a large saucepan of bubbling water for 15 minutes or until they are just tender. Drain thoroughly and then transfer to a heatproof bowl. Allow them to cool. Use a fork to roughly mash.
  • While waiting, simmer the peas in a small saucepan of boiling water for 2 minutes or until warmed. Drain thoroughly, then return to the pan and roughly mash with a fork.
  • Combine peas, spring onion, ham, and 1 egg with the potato mixture. Season generously and mix well. Divide the mixture into 12 equal portions and shape each into 8cm-wide discs. Arrange on a baking tray lined with parchment paper.
  • Whisk the remaining egg gently in a bowl. Place flour and breadcrumbs in separate bowls. Coat the cakes in flour, dip in egg, and roll in breadcrumbs until evenly coated. Chill on a plate in the fridge for 30 mins to set.
  • Prepare the pesto by blending coriander, almonds, garlic, chili, and lime juice in a food processor until finely chopped. Gradually pour in the oil while blending. Season the mixture and transfer it to a serving dish.
  • Heat oil in a large frying pan over medium heat. Cook half of the patties for 3 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate and repeat with the remaining patties.
  • Transfer the potato cakes to a beautiful platter and generously sprinkle with fresh coriander leaves. Accompany with a side of flavorful pesto and lime wedges for a perfect serving.
