Turn your leftover veggies into a tasty and comforting Bubble and Squeak side dish.
Ingredients:
  • 0.5 medium head cabbage, sliced
  • 3 slices bacon, diced
  • 1 onion, thinly sliced
  • 1 cup cubed cooked ham
  • 1 tablespoon butter
  • 3 cups potatoes - baked, cooled and thinly sliced
  • 0.5 teaspoon paprika
  • salt and pepper to taste
Instructions:
  • In a medium saucepan, gently simmer cabbage in water until tender, approximately 3 to 5 minutes. Drain and set aside.
  • In a well-seasoned cast iron skillet, sauté bacon and onion until the onion is soft and the bacon is cooked through, approximately 5 minutes.
  • Heat ham until warmed through. Stir in butter, then combine with cooked cabbage and potatoes. Season mixture with paprika, salt, and pepper. Cook until browned on one side, flip, and brown the other side.
