Scottish-inspired mashed potato patties with cabbage, carrot, and cheese, pan-fried to crispy perfection. A beloved family recipe from my Scottish father-in-law.
Ingredients:
  • 1 pound potatoes, peeled and cut into chunks
  • 2 cups shredded cabbage
  • 1 carrot, grated
  • 1 onion, minced
  • 1 teaspoon prepared yellow mustard
  • 0.5 cup shredded sharp Cheddar cheese
  • salt and pepper to taste
Instructions:
  • In a saucepan, cover the potatoes with water. Boil until tender enough to pierce with a fork, about 10 minutes. Drain and mash before setting aside.
  • In a separate saucepan, cook cabbage and carrot in a little water over medium heat until tender, for about 5 minutes. Drain any excess liquid, then mix into the mashed potatoes with onion, mustard, and Cheddar cheese. Season with salt and pepper to taste.
  • Form mixture into 4 patties. Grill on a greased pan over medium-high heat until golden brown and cooked through, about 5 minutes per side. Serve immediately.
