Delicious Scottish dulce de leche fudge.
Ingredients:
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup cream or milk
  • 4.5 cups white sugar
  • 0.5 cup chilled unsalted butter, cut into cubes
  • 1 dash salt
  • 1 teaspoon vanilla extract
Instructions:
  • Butter a 13x18-inch sheet pan or two 8x8-inch square pans generously, and set aside.
  • Combine condensed milk, cream, sugar, salt, and butter in a 4-quart heavy-bottomed saucepan. Heat over medium until boiling, stirring constantly. Lower heat and cook until thermometer reads 234-240°F (112-116°C), or mixture forms a soft ball in cold water. Approximately 20 minutes should do it.
  • Once the mixture is a light tan color, take it off the heat and vigorously beat with a wooden spoon until it cools and thickens. Stop beating when it turns from smooth to grainy, then mix in the vanilla extract.
  • Pour the mixture into the prepared pan without scraping any crystallized bits from the bottom to prevent crystallization. While the mixture is still warm, use a paring knife to score it into 2-inch squares. Allow it to cool for 6 hours to overnight until set. Cut into squares using a serrated knife and store in an airtight container at room temperature.
