Currant oatmeal scones: sweet, hearty breakfast treat with egg, sugar, butter, and milk.
Ingredients:
  • 2 cups rolled oats
  • 1.5 cups all-purpose flour
  • 0.5 cup dried currants
  • 0.25 cup white sugar
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 egg, beaten
  • 0.5 cup butter, melted
  • 0.33333334326744 cup milk
Instructions:
  • Preheat the oven to a toasty 425°F (220°C) and give the baking sheet a gentle grease.
  • In a large bowl, combine oats, flour, currants, sugar, baking powder, and salt, creating a well in the center. In a separate medium bowl, whisk egg until frothy, then mix in melted butter and milk. Pour the mixture into the well and stir until a soft dough forms.
  • Transfer the dough to a clean work surface and divide it into 2 equal pieces. Pat each piece into a 1/2-inch-thick circle. Place the dough circles on the prepared baking sheet and score each into 8 wedges.
  • Bake until puffed up and golden, approximately 15 minutes in the preheated oven. Cut into wedges and enjoy warm.
