Scottish pikelets, a delicious alternative to British crumpets, are best enjoyed with lemon juice and sugar or butter and jam.
Ingredients:
  • 1 cup self-rising flour
  • 0.25 cup sugar
  • 0.25 teaspoon baking soda
  • 1 egg, lightly beaten
  • 0.75 cup milk
  • 1 tablespoon butter
Instructions:
  • In a large bowl, combine the flour, sugar, and baking soda, sifting together. Gradually pour in the egg and milk while stirring constantly until the mixture is smooth.
  • Heat skillet over medium heat and gently butter the surface. Pour 1/8 cup batter into the skillet. Cook until bubbles form on the surface, then flip and cook each side for 1 to 2 minutes until lightly browned. Reapply butter between batches as needed.
