Indulgent dessert requires only four ingredients.
Ingredients:
  • 200g caster sugar
  • Zest and juice of 1 large lemon
  • 12 ready-made pikelets
  • Strawberries, to serve
Instructions:
  • Combine sugar and water in a saucepan over low heat, stirring until sugar dissolves. Mix in lemon zest and juice, bring to a boil, then simmer on medium heat for 5 minutes. Allow to cool.
  • Heat pikelets on the grill. Serve 2 warm pikelets per plate, top with a scoop of ice cream, drizzle with chilled syrup, and garnish with strawberries.
