Engage kids in making fluffy, mini pancakes with captivating bubbling batter.
Ingredients:
  • 187.50 gm self-raising flour
  • 185ml (3/4 cup) milk
  • 60g butter, melted, cooled
  • Extra melted butter, for greasing
Instructions:
  • Combine flour and sugar in a bowl using a wooden spoon, then set aside. In a separate jug, whisk together milk, butter, and egg.
  • Combine the milk and egg mixture with the flour mixture and whisk until smooth.
  • Preheat a large non-stick frying pan over medium heat and brush with a bit of melted butter. Spoon the mixture into the pan using a tablespoon. Cook until bubbles form, about 2 minutes. Gently flip them over and cook for another 1-2 minutes until done. Transfer to a plate and continue with the rest of the mixture, lightly greasing the pan in between batches with adult supervision.
  • Enjoy the pikelets warm or at room temperature, topped with jam and cream or your favorite topping.
