Create pikelets for quick lunchbox or after-school snacks by making a double batch and freezing half.
Ingredients:
  • 262.50 gm self-raising flour
  • 40.00 gm caster sugar
  • 342.48 gm reduced-fat milk
  • 2.20 gm vanilla extract
  • Canola oil cooking spray
  • Butter, to serve
  • Jam, to serve
Instructions:
  • Sift flour and sugar into a bowl, then create a well in the center. In a separate jug, whisk together milk, vanilla, and eggs until combined. Pour the mixture into the flour and whisk until just combined. Finally, add butter and whisk everything together until fully combined.
  • 1. Spray a non-stick frying pan with oil and heat over medium heat. 2. Cook rounded tablespoons of batter in batches for 1 to 2 minutes until small bubbles appear on the surface. 3. Flip and cook for another 1 to 2 minutes until fully cooked.
  • Transfer to a plate and cover to keep warm. Repeat with the remaining batter, then serve with butter and jam.
