Grilled Scottish langoustines

Fresh langoustines should be firm, plump, and vibrant pink with no black spots. Pair their sweet flavor perfectly with spicy 'nduja for a delightful dish.
Ingredients:
  • 10 medium langoustines from sustainable sources
  • 25 g higher-welfare 'nduja
  • 40 g unsalted butter (at room temperature)
  • 1 lemon
Instructions:
  • Season 2 litres of water with 40g sea salt and bring to a boil in a large pan. Prepare a large bowl with 2 litres of ice-cold water. Quickly blanch the langoustines in the hot water for 40 seconds, then transfer to the cold water and pat dry. Halve the langoustines lengthwise. Preheat the grill to medium-high. Blend the 'nduja with 20ml warm water until smooth. Add butter and blend to combine. Place langoustines on a roasting tray, cut side up, spread 'nduja butter, and grill for 4-5 minutes until golden. Squeeze lemon juice before serving with napkins and toothpicks.
