Try our tantalizing Italian grilled fennel with zesty basil, lemon, and olive oil dressing. Perfect for fennel lovers!
Ingredients:
  • 2 fennel bulbs
  • 2 tablespoons olive oil, divided
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch dried thyme
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Prepare your outdoor grill by preheating it to high heat and lightly oiling the grate.
  • Using a vegetable peeler or paring knife, delicately trim the bottom of each fennel bulb to create thin slices while keeping the core intact. Set aside the fronds from the fennel stalks. Cut the bulbs vertically into 1/4-inch slices. Coat the slices with 1 tablespoon of olive oil and season each side with salt and ground black pepper.
  • Grill fennel slices until beautifully charred on both sides, about 5 minutes per side, then transfer to a serving platter.
  • Combine 1 tablespoon of olive oil with basil, parsley, lemon juice, lemon zest, black pepper, thyme, and reserved fennel fronds. Whisk until well blended.
  • Top fennel slices with Parmesan cheese and a drizzle of lemon mixture.
