Grilled Oysters with Fennel Butter

Succulent oysters on a bed of crisp fennel, perfect as a seasonal starter.
Ingredients:
  • 1 teaspoon fennel seed, ground
  • 1 tablespoon shallots, minced
  • 1 tablespoon chopped fennel greens
  • 24 unopened, fresh, live medium oysters
Instructions:
  • Get the grill ready or heat the oven to 500 degrees F (260 degrees C).
  • Combine butter, ground fennel seeds, shallots, fennel bulb, fennel greens, pepper, and salt in a small bowl, blending until smooth.
  • Place the oysters on the grill or oven rack, cover, and cook for 3 to 5 minutes until they hiss and start to open.
  • Carefully open each oyster at the hinge using an oyster knife, remove the flat shell, and place 1/2 teaspoon of fennel butter on top. Grill until the butter is melted and hot.
