Delicious grilled oysters topped with tangy lemon butter and fresh parsley sauce.
Ingredients:
  • 16 whole live oysters
  • 2 cloves garlic, finely minced
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter
  • 1 teaspoon lemon juice
  • 1/2 teaspoon chili pepper flakes (or substitute with dashes of Tabasco)
  • 1/4 teaspoon salt
  • cracked black pepper to taste
  • 1 tablespoon finely minced parsley
Instructions:
  • Prepare the sauce: Heat a small saucepan over gentle heat. Once warm, combine olive oil and butter. Sauté garlic until aromatic, approximately 30 seconds. Stir in lemon juice, chili pepper flakes, salt, pepper, and parsley. Remove from heat.
  • Prepare and grill the oysters: Shuck the oysters and spoon sauce into each one. Place on a very hot grill for 5-6 minutes until the edges curl. Or, if you can't shuck, grill the oysters for 1 minute until slightly open. Remove, pry open with a shucking knife or screwdriver, spoon sauce, and return to grill for 4-5 minutes.
