Grilled Prosciutto and Peach Flatbread Pizza

Grilled naan flatbread topped with ricotta, peaches, prosciutto, basil, and a sweet balsamic drizzle.
Ingredients:
  • 1 cup balsamic vinegar
  • 0.25 cup honey
  • 0.5 teaspoon lemon juice
  • 2 naan bread
  • 4 ounces ricotta cheese
  • 2 fresh peaches, sliced
  • 1 (3 ounce) package prosciutto, torn into pieces
  • 3 tablespoons thinly sliced fresh basil
Instructions:
  • In a small saucepan, merge balsamic vinegar, honey, lemon juice, and pepper. Bring to a boil over high heat, then reduce to low and simmer until the mixture reduces to 1/3 cup, about 15 minutes.
  • Heat up the outdoor grill until it's nice and hot, then give the grate a light coating of oil.
  • Grill naan until lightly charred, about 2 to 3 minutes. Spread ricotta cheese on the charred side, top with peaches and prosciutto, sprinkle with basil, and finish with a drizzle of balsamic reduction.
  • Place the flatbreads back on the grill, cover it, and cook until the cheese melts and the bottom of the flatbread starts to char, approximately 7 minutes.
