Delicious prosciutto peach pizza with grilled peaches, salty prosciutto, hot honey, and fresh arugula - a flavorful summer delight.
Ingredients:
  • 1 lb pizza dough
  • 2 teaspoon oil
  • 3 tablespoon pesto
  • 3 tablespoon ricotta
  • 1 ripe peach, pitted and sliced
  • 4 pieces roughly torn prosciutto
  • 1 heirloom tomato, sliced
  • 1/3 cup quesadilla cheese
  • 1/2 cup arugula
  • 1 tablespoon hot honey
  • 2 teaspoons olive oil
Instructions:
  • Preheat your gas grill on High for 10 to 15 minutes. Grill peach slices until they start to soften and get those beautiful grill marks, which should take about 5 minutes. Then, set them aside.
  • Adjust half of the grill burners to Low for indirect heat zones. Shape pizza dough into a circle and brush one side with 2 teaspoons of olive oil.
  • Gently lay the oiled dough on the grill directly over the heat. Cover and grill until the bottom is lightly cooked with char marks, for 1 to 3 minutes.
  • Turn the dough with tongs, transfer to indirect heat, and brush with pesto. Top with dollops of ricotta and a sprinkle of quesadilla cheese. Add pieces of prosciutto, grilled peaches, and sliced heirloom tomato. Grill until cheese is melted, for about 3 minutes.
  • Take the pizza off the grill, add a bed of arugula, generously drizzle with hot honey and 2 teaspoons of olive oil. Slice into wedges and serve.
