Peach and prosciutto salad with honey basil dressing

Delicious peach, prosciutto, and bocconcini salad.
Ingredients:
  • 4 small yellow peaches, halved, stones removed
  • 60g baby rocket
  • 4 thin slices prosciutto, halved lengthways
  • 1/2 x 210g tub traditional bocconcini, torn
  • 40.00 ml pepitas, toasted
  • 28.60 gm honey
  • 21.00 gm lemon juice
  • 20.00 ml finely chopped fresh basil leaves
Instructions:
  • Preheat a chargrill pan over medium-high heat. Place peaches cut-side down on the pan and chargrill for 1 to 2 minutes until nicely charred. Transfer the peaches to a large plate.
  • Prepare the Honey Basil Dressing by whisking honey, lemon juice, and oil in a small bowl until the honey dissolves. Then, add basil and season with salt and pepper. Stir everything together to combine.
  • Assemble the baby arugula, peach slices, prosciutto, and bocconcini on a large serving platter or board. Drizzle dressing on top and sprinkle with pepitas. Season with salt and pepper before serving.
