Peach and arugula salad with succulent chicken.
Ingredients:
  • 4 thin slices prosciutto
  • 4 small chicken breast fillets
  • 9.20 gm olive oil
  • 100g pkt Rocket Salad
  • 3 peaches, halved, stone removed, cut into wedges
Instructions:
  • Preheat your oven to 190°C. Prepare a baking tray lined with non-stick baking paper. Wrap each chicken breast with a slice of prosciutto, securing with toothpicks. Season generously with salt and pepper.
  • In a large non-stick frying pan over medium-high heat, heat the oil until shimmering. Cook chicken for 1-2 minutes per side until lightly browned.
  • Place the mixture on the prepared tray and bake for 12 minutes or until fully cooked. Allow it to rest for 5 minutes before serving.
  • In a bowl, gently mix together the salad mix and peach. Divide the salad and chicken evenly among the serving plates.
