Elevate chicken with prosciutto, goat cheese, and fig filling for a gourmet dish that will amaze your loved ones.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 shallots, chopped
  • 1 teaspoon chopped fresh thyme
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.75 cup soft goat cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 (8 ounce) package cream cheese
  • 6 figs, chopped
  • 1 tablespoon chopped fresh basil
  • 6 skinless, boneless chicken breast halves
  • 12 large, thin slices prosciutto
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a baking sheet with 1 tablespoon of olive oil.
  • In a skillet over medium heat, warm 1 tablespoon of olive oil. Sauté shallots until translucent, around 3 minutes. Add garlic, thyme, salt, and pepper to the skillet and cook until fragrant, about 2 minutes. Transfer the fragrant mixture to a bowl and combine with goat cheese, mozzarella cheese, cream cheese, figs, and basil until well mixed.
  • Flatten the chicken breasts until thin. Add a generous 1/4 cup of the goat cheese mixture to the center of each piece of chicken. Roll up the chicken with the filling and wrap 2 slices of prosciutto around each roll, making sure to cover the seams. Arrange the chicken rolls on the baking sheet with the seam side down.
  • Place in the oven and bake for 20 minutes. Flip the chicken and bake until the chicken is fully cooked and the prosciutto is crispy, roughly another 20 minutes. Check that the internal temperature reaches 165°F (74°C) with an instant-read thermometer. Allow the chicken to rest for 5 minutes before serving.
