Short on time, big on flavor - a gourmet meal ready in under 45 minutes.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 20.00 ml balsamic vinegar
  • 4 small chicken breast fillets, trimmed
  • 4 thin slices prosciutto
  • 2 bunches asparagus, trimmed (see note)
  • 250g grape tomatoes, halved lengthways
  • 100g pitted kalamata olives
  • 1 bunch rocket, trimmed
  • 75g low-fat feta, crumbled
Instructions:
  • Combine oil, vinegar, salt, and pepper in a small screw-top jar. Shake vigorously to blend flavors. Let rest.
  • Sprinkle chicken with freshly cracked black pepper, then elegantly wrap each fillet with a slice of savory prosciutto.
  • Prepare the steamer basket by lining it with baking paper. Arrange the chicken in a single layer in the basket. Steam, covered, over boiling water for 7 to 9 minutes or until the chicken is cooked through. Transfer the chicken to a plate and cover it with foil to keep it warm.
  • Steam asparagus until just tender. Transfer to a bowl and gently combine with tomatoes and olives.
  • Prepare the serving plates with a bed of arugula. Add the asparagus salad on top. Slice the chicken diagonally and place it over the salad. Sprinkle feta on top, drizzle with dressing, and serve.
