Tomato, peach and bocconcini salad recipe

Whip up a quick and refreshing salad with ripe tomatoes, juicy peaches, and creamy bocconcini.
Ingredients:
  • 3 vine-ripened tomatoes, cut into wedges
  • 1 peach, stoned, cut into wedges
  • 1 plum, stoned, cut into wedges
  • 8 slices prosciutto, coarsely torn
  • 60g pkt Baby Rocket
  • 125.00 ml mint leaves
  • 200g cherry bocconcini, coarsely torn
  • 60ml olive oil
  • 40.00 ml red wine vinegar
  • 11.80 gm Dijon mustard
Instructions:
  • Assemble the tomato, peach, plum, prosciutto, rocket, mint, and bocconcini on a beautiful platter.
  • In a screw-top jar, mix together the oil, vinegar, honey, and mustard. Season with salt and pepper. Pour the dressing over the salad.
