Peach, nectarine and tomato relish recipe

Fresh peach and nectarine relish, perfect for crackers, cheese boards, and mezze platters.
Ingredients:
  • 2 large ripe yellow peaches, stoned, chopped
  • 2 large ripe yellow nectarines, stoned, chopped
  • 1 shallot, finely chopped
  • 4 roma tomatoes, chopped
  • 1 tsp yellow mustard seeds
  • 1/4 tsp dried chilli flakes (optional)
  • 40.00 ml finely grated ginger
  • 1 dried bay leaf
  • 185ml white wine vinegar
  • 220g white sugar
Instructions:
  • In a medium heavy-based saucepan, bring together peach, nectarine, shallot, tomato, mustard seeds, optional chili, ginger, bay leaf, vinegar, and sugar. Simmer over medium heat, then reduce to low and cook for 30 minutes until reduced by one-quarter, stirring occasionally.
  • Prepare preserving jars by placing them along with their lids in a deep saucepan, covering them with cold water. Bring to a gentle boil, then cover and simmer for 10 minutes. Carefully remove the sterilized jars and lids using tongs and place them upside down on a clean tea towel.
  • Fill the warm sterilized jars with relish using a spoon. Seal the jars, then turn them upside down for 2 minutes. Return the jars to an upright position and allow them to cool completely.
