Delicious peach and nectarine crumble - perfect for any occasion!
Ingredients:
  • 3 cups soft peaches, or as needed
  • 3 cups soft nectarines, or as needed
  • 0.5 cup white sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 0.5 cup brown sugar
  • 0.25 cup extra-virgin coconut oil
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 9-inch square baking pan or pie pan. Meanwhile, bring a pot of water to a boil.
  • Prepare the filling: Blanch each peach and nectarine individually for 30 seconds, then allow them to cool for about 5 minutes. Peel, pit, and chop the fruit into bite-sized pieces.
  • Combine the fruit with sugar, cornstarch, and vanilla in a large bowl, then pour the mixture into the prepared pan.
  • Prepare the topping by mixing flour, brown sugar, coconut oil, baking powder, cinnamon, and salt in a bowl until crumbly. Sprinkle evenly over the filling.
  • Bake in the preheated oven for about 30 minutes until the top is golden brown and juices bubble. Allow it to cool for at least 15 minutes before serving.
