Whip up delicious zucchini fritters with zesty lemon sour cream for a simple and tasty solution to excess zucchini.
Ingredients:
  • 1 lb. zucchini (about 2 zucchini)
  • 1 teaspoon plus a pinch of coarse salt
  • 1 egg
  • 2 green onions, finely chopped
  • 1/8 teaspoon black pepper, plus more for garnish
  • 3 tablespoon flour
  • 1 tablespoon neutral oil
  • 1/2 cup sour cream
  • 1/4 teaspoon lemon zest, plus more for garnish
  • 1 tablespoonfreshly-squeezed lemon juice
  • 1 clove garlic, minced
Instructions:
  • Start by trimming and shredding the zucchini into a large bowl. Add 1 teaspoon of salt and toss well to coat. Let it sit for 10 minutes, stirring occasionally. In another bowl, beat together the egg, green onions, and pepper.
  • Wrap the zucchini in a clean kitchen towel and squeeze out excess liquid. Then, mix the squeezed zucchini and flour into the egg mixture.
  • Preheat a griddle or extra-large cast-iron skillet over medium-high heat. Drizzle oil and evenly spread across the pan. Spoon the mixture into 6 portions onto the hot griddle, then gently press down with a spatula. Cook until both sides are golden brown, about 5 to 7 minutes, flipping halfway through.
  • In a small bowl, combine sour cream, lemon zest, lemon juice, garlic, and a pinch of salt. Finish with a sprinkle of zest and pepper before serving with fritters.
