Transform surplus zucchini into crispy fritters with herbs, served with a tangy garlic lemon sour cream dip.
Ingredients:
  • For the zucchini:
  • 1 pound zucchini (about 3 medium sized), coarsely grated
  • 1 teaspoon kosher salt
  • For the dipping sauce:
  • 1/2 cup sour cream (can substitute plain Greek yogurt)
  • 1 garlic clove, minced, about 1 teaspoon
  • 1/2 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • Pinch of salt
  • For the fritters:
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 3 green onions, minced
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon minced fresh basil
  • 1 teaspoon kosher salt (more to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup extra virgin olive oil or canola oil
Instructions:
  • Prepare zucchini: Sprinkle grated zucchini with 1 teaspoon of salt and allow to sit in a sieve or colander for 10 minutes. Gently press with a wooden spoon to extract excess water, then wrap in paper towels and squeeze out remaining liquid.
  • In a medium bowl, combine sour cream, minced garlic, lemon zest, lemon juice, and a pinch of salt. Set aside for the dipping sauce.
  • Prepare the fritter batter by whisking together an egg in a large bowl. Add grated zucchini, flour, minced green onions, thyme, basil, lemon zest, salt, and pepper. Mix well until fully combined.
  • Fry the fritters: Heat oil in a large skillet until shimmery and hot. Test the oil by flicking a little flour into it - if it sizzles, it's ready. Drop heaping tablespoons of batter into the skillet in batches. Flatten slightly with a spoon. Cook until browned, 4-6 minutes per side. Transfer to a paper towel-lined plate, sprinkle with salt, and repeat with remaining batter.
  • To serve the fritters, enjoy them right away with a side of zesty sour cream dipping sauce. Keep them warm in the oven or quickly reheat under the broiler. These versatile fritters work great as an appetizer or a veggie side dish. For an extra touch of indulgence, top with a perfectly poached or fried egg.
