Greek yogurt bowls with homemade granola: a delicious and satisfying treat for any time of day, guilt-free.
Ingredients:
  • 1 cup chopped walnuts
  • 1 cup light honey
  • 2 cups rolled oats
  • 0.75 cup raw buckwheat groats
  • 0.5 cup buckwheat flakes
  • 0.5 cup chopped raw almonds
  • 0.5 cup chopped raw hazelnuts
  • 0.5 cup sunflower seeds
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.125 teaspoon ground ginger
  • 0.5 cup light olive oil
  • 0.5 cup packed coconut sugar
  • 0.25 cup brown rice syrup, or more to taste
  • 2 teaspoons vanilla extract
  • 1 cup shredded unsweetened coconut
  • 0.5 cup coarsely ground flax seeds
  • 0.5 cup raisins
  • 0.25 cup golden raisins
  • 10 cups plain nonfat Greek yogurt
  • 5 cups fresh raspberries
Instructions:
  • Preheat the oven to 300°F (150°C) and prepare 2 rimmed baking sheets with parchment paper.
  • Place walnuts and honey in a jar, cover, and let it sit.
  • Mix together oats, groats, buckwheat flakes, almonds, hazelnuts, sunflower seeds, cinnamon, nutmeg, allspice, and ginger in a bowl until well combined.
  • Combine olive oil, coconut sugar, and brown rice syrup in a small saucepan over low heat until blended. Heat for around 5 minutes. Remove from heat, stir in vanilla extract, and pour over the dry mixture. Mix well and spread onto prepared baking sheets.
  • Preheat the oven and bake for 25 minutes. Stir, rotate, and bake for an additional 15 minutes. Stir, rotate once more, and bake until golden brown, for about 15 minutes. Sprinkle coconut, flax seeds, and raisins over the granola and toss to combine. Turn off the oven, leaving trays inside, and prop the door open with a wooden spoon for 10 minutes. Cool before serving.
  • In each deep single-serve bowl, layer 1/2 cup yogurt with a sprinkle of granola, a handful of raspberries, and a drizzle of walnut-honey mix. Repeat for the remaining bowls.
